NEW ORLEANS — Justin Wilson, the Cajun chef whose down-home humor, gumbo-thick accent and "ga-ron-tee" of authentic bayou cuisine delighted television audiences, has died. He was
Wilson, who died Wednesday in Baton Rouge, was the host of several cooking shows on public television, including "Cookin' Cajun," "Louisiana Cookin"' and "Easy Cooking."
"I am a gourmet, but I am more of a gourmand," he once said. "A gourmet is somebody that's an epicurean. But a gourmand is somebody that's a P-I-G hog and that's what I am."
He pronounced his name JOOS-tain and had white hair, a floppy bow tie and bright red suspenders. He wore a belt, too, saying it was because he was a safety engineer.
His trademark expression was "I ga-ron-tee!" (guarantee), from the Cajun "J'vous garantis."
He released five cookbooks, 27 albums of short stories and an album of Christmas songs, and was host of several cooking programs, including "Louisiana Cookin'" and "Easy Cooking."
Wilson worked without a script, taping in front of audiences and refusing to let mistakes be edited out or canned laughter edited in, said Carl Fry, who produced all of his Louisiana Public Broadcasting shows.
